M~'l~ili~~ FLAXSEED cupcakes Senior dietetics major Elizabeth Provencher had the opportunity to present her research project at the Alpha Chi Annual Convention in Baltimore, Md. Entitled "A Star-Spangled Super-Regional Convention," the event invited students across the nation to meet and display their accomplishments on March 22-24. Provencher presented her project on the health benefits of using flaxseed instead of flour in chocolate cupcakes at the convention. She argued that flaxseed in baked goods reduced risk factors for heart disease. "Since that is the leading killer in America, I wanted to come up with an exceptional product that most consumers would enjoy," Provencher said. Dietetics Director Lisa Ritchie had many compliments about the nature of Provencher's work. "She did an excellent job in every step of this research project," Ritchie said. "Her paper was one of the finest that I have seen in 15 years of teaching Advanced Food Science." Ritchie agreed that the presentation was the first step toward greater things for Provencher. "Her in-depth understanding of flaxseed and baking will help her counsel and guide others toward food choices that will result in a decreased risk of chronic disease," Ritchie said. "As a result of this experience, she is better prepared for research opportunities in graduate school and researchrelated areas of dietetics practice."
